The Tetra Pak high-shear mixer for cold emulsion products employs a 2-step process. The first involves high flow and low shear to create a coarse emulsion, while the second involves high-shear mixing to create a fine emulsion. Every detail of the mixing process can be controlled, including speed, time and shear force, to achieve the desired product texture and droplet size. The mixer can handle all types of emulsified sauces and nonemulsified sauces, with or without particles, as well as powders, liquids, particles and blocks, such as butter and cheese. It can be set up to produce a range of capacities, in batch or continuous modes.
