The USDA’s FSIS has issued guidance for post-mortem inspection and verification of ready-to-cook requirements.

The directive includes information on inspection procedures for online and offline inspections at young chicken and turkey slaughter establishments operating under the New Poultry Inspection System (NPIS). It also includes guidance for verifying ready-to-cook requirements and instructions for cases where fecal contamination, septicemia or toxemia is found.

The guidance is based on answers to common questions about the Modernization of Poultry Slaughter rule, which took effect in August of 2014 and established the NPIS procedure. The new requirements become effective when a plant begins operating under NPIS.
